Comer vegetais faz bem à saúde. No entanto, alguns podem ser ainda mais benéficos. Estamos falando do ora-pro-nóbis, a taioba e a serralha. Elas são consideradas Plantas Alimentícias Não Convencionais (Pancs) e são ricas em minerais essenciais, como ferro, cobre, zinco, manganês, cálcio, magnésio, fósforo e potássio.
De acordo com um estudo da Universidade de São Paulo (USP), os vegetais citados acima possuem um valor nutricional comparável ou até superior ao mais famosos. Por exemplo, eles possuem mais proteína do que o espinafre.
Estudo reforça a importância de incentivar a produção dos vegetais O trabalho analisou Plantas Alimentícias Não Convencionais (Pancs) cultivadas em diferentes regiões de São Paulo e Minas Gerais, tanto cruas quanto refogadas. Os resultados foram comparados com dados da Tabela Brasileira de Composição de Alimentos (TBCA) da USP e do FoodData, do Departamento de Agricultura dos EUA.
O ora-pro-nóbis, a taioba e a serralha são plantas rústicas que podem ser encontradas em diferentes regiões tropicais, pois elas se adaptam a vários tipos de solos, mas requerem bastante luminosidade. No Brasil, são encontradas principalmente nos estados da Bahia, Minas Gerais, Paraná, Santa Catarina e Rio Grande do Sul.

Dentre as diversas Pancs, ora-pro-nóbis, taioba e serralha foram escolhidos para realizar a pesquisa devido à sua crescente popularidade. Apesar disso, muitas plantas nativas brasileiras não fazem parte do grupo alimentar da população. Isso acontece, em parte, pela falta de informações sobre sua composição nutricional.
O estudo ainda confirma a expectativa de que os alimentos silvestres podem ter valores nutricionais comparáveis ou até superiores aos de alimentos tradicionais. E reforça a importância de incentivar sua produção e consumo para ampliar a diversidade da dieta do brasileiro e suprir demandas nutricionais.

Não foram observadas diferenças significativas entre as concentrações de nutrientes minerais e proteínas em plantas cruas e cozidas.
A análise nutricional do ora-pro-nóbis, da taioba e da serralha mostrou que os níveis de minerais e proteínas dessas plantas são, na maioria das vezes, iguais ou superiores aos do espinafre.
A taioba se destacou entre as plantas analisadas, apresentando concentrações de minerais superiores às das plantas convencionais, com altos teores de ferro, cobre, zinco, cálcio e fósforo.
Embora a serralha tenha apresentado menores teores de alguns nutrientes minerais (manganês, magnésio e potássio) em comparação às plantas convencionais, outros minerais (ferro, cobre, zinco, cálcio e fósforo) foram iguais ou significativamente maiores.
